Look at it, it’s just beautiful isn’t it. Looks summery, doesn’t it. Well it eats like a summer time salad too, but the delight of this delicious, zingy salad is that everything’s in season now. So we can all enjoy a little sunshine in a bowl, in mid February.

Ingredients

2 heads of chicory

5 dates

1 red apple

1 bunch watercress

handful mint leaves

handful flat leaf parsley

dressing:

1 lime, juiced

5 tbsp olive oil

2 tbsp white wine vinegar

Method

Wash all yer salad leaves, slice the dates and apple, roughly chop the herbs. Whisk the dressing ingredients together and toss the salad in the dressing just before serving.
