OVERNIGHT SOAKING ALERT!

We bought a box of chia seeds several years ago, pre-climate kind eating days, and it sat forgotten in the cupboard for a long while. Until one day, about 1BCKE (before climate kind eating), we opened the box up and thought someone was having a giraffe. Back into cupboard’s shadiest corners they went.

Then one climate kind day this October gone, we discovered what all the fuss was about. These teeny tiny seeds can transform into something quite remarkable – dessert! A completely vegan mega health dessert, without even trying.ย 

We are late to the chia seed party (by a couple of thou and then some) but doing everything we can to catch up.

Don’t let the overnight soaking trouble you, it takes less than 10mins to prepare and when you wake up breakfast is waiting for you.

5 mins | serves 3 | about the easiest thing ever

Ingredientsย

base recipe:

2 cups coconut milk

1/2 cup chia seeds

1/2 vanilla pod goo, or 1/2 tsp extract

1/4 cup maple syrup, or your preferred sweetner

variations:

Chocolate – 1/4 cup cocoa powder

Chai – 1 tsp ground cinnamon and a pinch of ground up cardamom pod and cloves

Method

  1. Blend the coconut milk, vanilla, maple syrup and your choosen flavourings in a blender until smooth. Transfer to a bowl and whisk in the chia seeds. Transfer to a serving bowl/maison jars/ramekins – glass is nice – cover and fridge it for at least 4 hours
  2. Done

more variations (add to the blender):

Strawberry – 1/2 cup fresh strawberries

PB&J – 2 tbsp each of PB and J – or more!

Pecan – 1/2 cup chopped toasted pecans, 1/2 tsp cinnamon

Matcha – 1 tbsp matcha green tea powder

You get the drift.
