Chocolate comedown? Right the balance with these almond and goji berry raw bliss balls. Our friend the chia seed is back, in a supporting role here.

20 mins + soaking time | makes 16 | well easy

Ingredients

1 cup cashew nuts, soaked in boiling water for 30mins

1 cup pitted dates – medjool if you can – soaked in boiling water

4 tbsp date water – from soaking them

1/4 cup pumpkin seeds

2 tbsp chia seeds

2 tbsp ground almonds

2 tbsp goji berries

2 tbsp raw cocao powder

goo from half a vanilla pod

Ours are coated in desiccated coconut, matcha green tea powder, crushed goji berries and raspberry powder

Method 

Pulse the drained cashews and pumpkin seeds in a food processor until finely chopped. Pulse the dates and the goji berries along with the reserved date water. Transfer all to a big bowl and add the chia seeds, cocao powder, ground almonds and vanilla goo and mix it all together. Add a little more date water if it looks a tad crumbly for your liking.

Once it’s a slightly sticky dough like consistency roll into 16 balls, or there abouts, betwixt the palms of your hands.

When you’re ready get your chosen coatings onto seperate plates and roll away!
