Overnight Oats…

…. Of the lemon, honey and thyme variety.

Quick, easy, nutritious and delicious, what’s not to like, eh.

Oh and, the game’s in the name but OVERNIGHT SOAKING ALERT incase you missed it.

10 mins | serves 4-6 | so so easy


1/2 cup rolled oats

1/2 cup greek yoghurt

1/2 lemon, zest and juice

1/2 tsp vanilla extract

1/3 cup milk

1 tbsp chia seeds

2-3 sprigs thyme, just the leaves, plus one small sprig per serving

2 teaspoon honey, plus extra for drizzling


Starting with the greek yoghurt in a bowl, bung everything in and mix together thoroughly. Cling and leave overnight in the fridge.

When you’re ready for breakfast, transfer the oats to individual dishes, filled pretty darn full, drizzle with honey and decorate with thyme sprigs.
