Veggie power part 1.
Celeriac isn’t for everyone I guess, until you try these babies.
An equally great alternative to fries with a burger as parsnips with a roast.
45 mins | serves 2-3 | super easy
Ingredients
1 celeriac
2 tbsp coconut oil
2 tsp dried oregano
1-2 cloves garlic, crushed
4 sprigs rosemary
Method
Preheat the oven to 200°C.
Peel and cut the celeriac in chip-like wedges. Fill a pan with cold water and add the celeriac. Bring to the boil, drain the fries and allow them to steam dry in a wide bowl. Add the oregano, garlic, season with a good grind of pepper and good salt and mix well.
Heat the oil in a baking tray in the oven. When the oil is hot, remove from the oven and add the fries to the tray. Top with the rosemary stalks and return the tray to the oven for 35-40 minutes until they are light golden in colour and a little bit crispy.
Dig in.
