Veggie Power part 2.

Griddled red onions with pomegranate molasses and sumac, Turkish stylee. Yuh-huh.

These are so good, they made it into the Guardian’s ‘Our 10 best onion recipes’. Are ya having that? 

30 mins | serves 6 as a side | tres easy

Ingredients

3 red onions

2 tbsp vegetable oil

4 tbsp pomegranate molasses

2 tsp sumac

1 tsp sea salt flakes

small bunch flat leaf parsley

Method

Peel and quarter the onions, leaving the roots and tips on. Toss the onions in the oil and skewer them. Fry in a very hot griddle pan until well-charred.

Drizzle the hot onions with the molasses, sprinkle with the sumac and some salt flakes. Let them cool a little, then sprinkle with parsley and serve.
