Whipped Goat’s Cheese & Baked Figs

Ohh. Yes. Mama.

Soooooo good, so effortless, makes for a perfect Crimble eve starter. Or frankly, eaten at any time.

20 mins max | serves 8 | eyes closed easy

200g soft goat’s cheese

100g cream cheese

200ml double cream

12 ripe figs, halved

few sprigs thyme

olive oil

small bunch chives

Salt and ground white pepper

handful walnuts, toasted

melba toast or equivalent to serve

Oven 180°C / gas 4. Put figs on a baking tray cut side up, drizzle with olive oil, season and lay upon thyme sprigs. Bake for 8 mins until soft.

Whack the cream and cheeses in the food processor, season and whizz until smooth. Transfer to a bowl, snip yer chives over and fold in.

Dollop then swoosh spoonfuls of the whipped cheese over 8 plates with the back of a spoon, lay 3 halves of fig around on each plate, sprinkle with walnuts and serve with toast.

Spreadable delight.
