Warm Mushroom Salad

Hmmmmm, mushrooms – ruddy love ’em. And this is shroom bliss. 

Roast/saute some new potatoes, fry some shrooms in butter, add some thyme sprigs, you can throw a clove of smashed up garlic in the pan if you wish towards the end, garnish with tarragon and parsley.

The mushrooms in question are mini portobello, maitake, and half an eryngii mushroom per person.
