Simple, delicious, healthy, veegs. Nice.
10 mins | serves 2 | très easy
1 cup/packet cooked black rice
4 cups rocket (arugula)
100g whole almonds, sliced and lightly toasted
80g dried cherries, or cranberries
basil, large bunch
1 lemon, juice
60ml olive oil
2 tsp agave / maple syrup
1 clove garlic, squashed
1 tsp dijon mustard
sea salt flakes and ground black pepper
Pop the garlic in the lemon juice and put to one side to infuse for 5.
Wash and chop the rocket, bung it in a big bowl with the rice, almonds and cherries.
Remove the garlic from the lemon juice and discard, it’s done its job, then add the rest of the dressing ingredients into the lemon juice and whisk until emulsified.
Pour the dressing over the rice and toss it all together.
And yer done.
