Coconut, avocado, radishes, coriander, lime, black rice, oh yeh! Really very delicious and extremely good for you – it’s an oil free dressing even! Full of vegan wonder.

Ingredients
1 cup cooked black rice
big handful coconut flakes, toasted
1 avocado, cubed
5 radishes, sliced
coriander, decent bunch
1 spring onion, sliced
dressing:
1 lime, juice and zest
1 tbsp soft dark brown sugar
80ml coconut milk
coriander stalks, a few
splash of soy sauce
Method
Whisk the dressing ingredients together until well combined.
Get the rice and spring onion in a big bowl, pour most of the dressing in and stir to coat everything.
Then it’s just an assembly job. Layer up the rice, avocado, coriander, radishes and finally the coconut flakes. Drizzle over the remaining dressing and serve straight away.
