Golden Beet, Grape & Pecan Black Rice Salad w/ Shallot Apple Dressing

Delectable (vegan) business.

10 mins | serves 2 | dead simple

Ingredients

1 cup cooked black rice 
1 golden beetroot, get the mandolin out! 
2 handfuls green grapes, halved
handful pecans 

handful mixed leaves
dressing: 
1 shallot, thinly sliced
60ml apple cider vinegar
80ml olive oil
1 tsp dijon
sea salt flakes and ground black pepper

Method

Steep the shallot in the vinegar for 5 mins to quickle the shallot.

Add in the rest of the dressing ingredients and whisk together until emulsified.

Toss all but the pecans together in the dressing, arrange on a plate and sprinkle over the pecans.

Fin.

  1. I really like the idea of this recipe – the contrast of texture especially. Kicking myself for not buying golden beets at the market yesterday, but this recipe is going into the ‘need to try’ pile. Thanks. margaret
