1 cup cooked black rice
1 golden beetroot, get the mandolin out!
2 handfuls green grapes, halved
handful mixed leaves
1 shallot, thinly sliced
60ml apple cider vinegar
80ml olive oil
1 tsp dijon
sea salt flakes and ground black pepper
Steep the shallot in the vinegar for 5 mins to quickle the shallot.
Add in the rest of the dressing ingredients and whisk together until emulsified.
Toss all but the pecans together in the dressing, arrange on a plate and sprinkle over the pecans.
